Child Development & Psychology ICredit:

Prerequisite: noneThis course is required for students entering the Early Childhood Education Program. Topics covered are pregnancy, fetal development, the birth process, preventing birth defects, and caring for a newborn. Parenting skills, teen pregnancy, and child abuse are discussed. The physical, emotional, social, and intellectual development from birth to age three is emphasized.
Students will:
- Create hands-on projects/toys for infants and young children
- Observe and interact with guest babies and preschool children
- Prepare foods for ages 1 - 3 years
Child Development & Psychology II
Credit: 1/2 unit Year: 9, 10, 11, 12
Prerequisite: Child Development & Psychology I
This course is required for students entering the Early Childhood Education Program. As a continuation of Child Development and Psychology I, childhood from age four through adolescence is covered. Emphasis is placed on the school age child to prepare students for future work with children.
Early Childhood Education 1Credit: 3 units Year: 11, 12
Prerequisite: Child Development & Psychology I and IIThis course is open to fully accredited juniors and seniors Students will spend morning assisting in one of the ESM Elementary School classrooms. Studetns wil learn how to perform in the school workplace, interact professionally and responsibly with young children, and how to interface with educational professionals. Field trips to local early childhood schools will be scheduled.
Students will:
- Develop employable skills
- Gain experience that will enhance a college career in education
- Create, implement educational activities and resources
- Create a portfolio
Early Childhood Education 2Credit: 3 units Year: 12
Prerequisite: Child Development and Psychology I and II, Early Childhood Education 1
This course is structured the same as Level I. Field trips to local early childhood schools will be scheduled. In addition, students will:
- Design an age-appropriate learning environment
- Develop leswons for their seit-classroom
- Update their portfolio
Foods and Nutrition(Core)
Credit: 1/2 unit Year: 9, 10, 11, 12
Prerequisite: none
The core course content comprises units in proper kitchen procedures, meal management, food labeling, meal service, basic nutrition and fundamentals in baking and food preparation. Students also explore careers in food and nutrition fields. A serious desire to apply new techniques and develop team management skills is advisable. This course is a prerequisite for a Culinary Arts concentration.
Fashion Sewing
Credit: 1/2 unit Year: 10, 11, 12
Prerequisite: None
This hands-on course will teach students the fundamentals of fashion and basic sewing skills. A field trip to a fashion show will be scheduled. Students are responsible for covering the cost of their chosen pattern and fabric.
Students will:
- Determine their personal fashion style and color system
- Create hand and machine sewn projects
- Create simple articles of clothing
International and Regional Foods
Credit: 1/2 unit
Year: 11, 12
Prerequisite: Food and Nutrition (core)
This course leads to a greater understanding of meal patterns of various countries and regions. It includes food preparation of hors d'oeuvres, soups, salads, breads, main dishes and desserts at a gourmet level. The course is designed for the student interested in gaining experience in specialty dishes.
Human Development
Credit: 1/2 unit Year: 9, 10, 11, 12
Prerequisite: none
This course focuses on personal development, teen issues, family dynamics, self-management for success, stress management, friendships, and dating relationships. Special activities such as planning and preparing a meal with classmates are included. This course is a prerequisite for a Culinary Arts concentration.
